Satay is a versatile dish that can be prepared with different proteins. This recipe features pork, but you can also choose shrimp, chicken, beef, scallops, salmon, tempeh, or tofu. Serve with lettuce leaves for wrapping.
The secret to preparing meats is to brine them overnight. A basic brining mixture includes 6 cups of cold water, 1 sliced lemon or lime, and 1 tablespoon each of kosher salt and sugar stirred together. Put your protein in a covered container, refrigerate, and let it brine overnight.
For Fish or Seafood, just apply a light coat of Olive Oil and a dash of Sea Salt and Pepper.

PORK SATAY RECIPE - (makes 8)
Brine a 1 lb boneless pork roast overnight, then rinse it, pat it dry with paper towels, and cut as indicated. Thread the cut pork pieces onto 6" skewers that have been soaked in cold water for at least 2 hours.
8 Skewers
4 Tbs Extra Virgin Olive Oil, divided.
Kosher Salt
Fresh ground Black Pepper
Lightly coat the skewers with olive oil, then sprinkle them with a bit of kosher salt and a few grinds of fresh black pepper.
Preheat a grill pan on high until it is smoking hot, then brush it with olive oil. Position the skewers on the grill pan with the ends hanging off, and grill for approximately 3 minutes per side until they have nice brown grill marks.
Top with Asian Sesame Sauce, recipe provided below.
ASIAN SESAME SAUCE - (makes 1-1/2 cups)
Believe me, this will become our favorite new sauce, perfect for almost any dish!
2/3c Tahini
1/3c. Sugar
1/4c. Seasoned Rice Vinegar
1/4c. Sesame Oil
2Tbs Water
1tsp Sriracha
1tsp grated peeled Ginger
1/2tsp minced Garlic
Put the ingredients into a food processor and blend until smooth, approximately 2 minutes.
