Indulge in Elegance: Filet Mignon Wrapped Bacon & Tonkatsu Demi Sauce Recipe Revealed by Koji Cooks

This recipe is perfect for a special occasion. Although it's costly, indulge yourself with this luxurious filet paired with a smooth tonkatsu demi. The sauce is a delightful fusion of Japanese and French flavors, coming together beautifully in this decadent dish. Serve with a simple green vegetable and potato.

TONKATSU DEMI SAUCE - Recipe (makes about 3/4cup)
2 tablespoons of unsalted butter
1 tablespoon flour
1 tablespoon finely chopped shallot
1/4 cup red wine
1 cup beef stock
3 tablespoons ketchup
1 tablespoon light brown sugar
2 teaspoons soy sauce
1/2 teaspoon of Worcestershire sauce
kosher salt & cracked black pepper
METHOD
Place a small saucepan on medium heat, melt the butter, and then add the flour, stirring for 2 minutes. Pour in the wine and stir for 1 minute. Incorporate the stock,ketchup, soy sauce, Worcestershire sauce, and a pinch of salt and pepper. Bring the mixture to a steady simmer and reduce it by half, which should take about 10-15 minutes. Keep warm until ready to serve. This sauce is also excellent on a burger.
FILET WRAPPED IN BACON - Recipe (serves 2)
2 slices of bacon, gently cooked.
2 wooden skewers
1 tablespoon of extra virgin olive oil
Two filet mignons, each weighing 6 ounces.
kosher salt and cracked black pepper
METHOD
Generously season the filets with salt and pepper, then wrap each one in bacon and secure it with a skewer as shown in the photo.
Preheat a grill pan or steel pan until it is smoking hot. Drizzle oil onto the pan, then sear the filets for 6 minutes on each side. Check for an internal temperature of 130°F for medium-rare. Continue cooking until the desired doneness is achieved, or finish cooking in a preheated 400°F oven. Allow the filets to rest for 5 minutes, then top with warm sauce.
