How to Make the Perfect Broccoli and Cheese Calzone: Koji Cooks Recipe

A Calzone is essentially a folded stuffed pizza, simple to prepare with limitless filling options. This version is vegetarian, featuring steamed broccoli and three cheeses, and pairs perfectly with the Koji cooks pizza pasta red sauce recipe. Any leftover filling is great dolloped on any pasta with red sauce.

BROCCOLI AND CHEESE CALZONE - Recipe (serves 2)
A 12oz ball of fresh pizza dough
Flour to roll out the dough
A 9x12 foil lined baking sheet
Olive Oil pan spray
1-1/2 cups of steamed broccoli, pulsed in a food processor.
1 cup of ricotta cheese
1/2 cup shredded mozzarella
1/4c grated parmesan cheese.
1/2 teaspoon kosher salt
15 turns of cracked black pepper.
*1 large egg beaten.
METHOD
On a floured surface, use a rolling pin to roll out the dough into a 12" circle and place it on a foil-lined, pan-sprayed baking pan. In a medium-sized bowl, combine the broccoli, cheeses, salt, pepper, and the beaten egg, reserving 1 tablespoon to brush on top before baking. Arrange the filling in a long mound on one half of the dough. With a small pastry brush, apply a line of the reserved beaten egg along the outer edge, fold the dough over like a turnover, and crimp the edge. Evenly brush the remaining reserved beaten egg on top and bake for about 30 minutes or until the top and bottom are golden brown. Refer to photos.
