In this recipe, I use boneless country ribs. They are simple to prepare, and the secret is to brine them overnight or for up to two days, resulting in the most tender and moist ribs possible.

ASIAN BBQ COUNTRY RIBS
1-2 pounds of boneless country pork ribs, sliced into 1" widths.
1 Tangerine or orange sliced.
1 tablespoon kosher salt
1 tablespoon sugar
BRINE - METHOD
Whisk together 6 cups of water with the salt and sugar. Add the sliced tangerine and pork, cover and refrigerate for up to 2 days
BBQ SAUCE
1/4 cup ketchup
2 tablespoons dark brown sugar
2 tablespoons soy sauce
2 teaspoons balsamic vinegar
2 teaspoons yuzu juice or lemon juice
3 tablespoons hoisin sauce
1 teaspoon sriracha
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
METHOD AND COOKING
In a small bowl, whisk the sauce ingredients together. Take the ribs out of the brine and dry them with a paper towel. Place them on a foil-lined baking pan that has been sprayed with pan spray, then coat them generously with BBQ sauce. Bake in a 425-degree oven set onconvection for 20-25 minutes or until they reach an internal temperature of 145 degrees.
