How to Make a Refreshing Asian Sesame Cucumber Salad - Koji Cooks Recipe

This incredibly simple cucumber salad recipe works wonderfully as a standalone salad, a side dish, or a component of an appetizer or main course. The salad is vibrant and refreshing, and it’s sure to become your new favorite. The dressing would be equally as good on any salad.
ASIAN SESAME CUCUMBER SALAD - Recipe (serves 4-6)
1 English cucumber thinly sliced; I use a mandoline slicer for this, but a sharp knife will also work perfectly.
1-2 tablespoons toasted sesame seeds
DRESSING
3 tablespoons ponzu sauce (or 2-1/2 tablespoons soy sauce + 1 teaspoon lemon juice).
2 tablespoons seasoned rice vinegar
1 tablespoon honey
1-1/2 tablespoons sesame oil
METHOD
In a small bowl, whisk ingredients together until the honey is dissolved. Mix the cucumber and sesame seeds with 3 tablespoons of the dressing, or more if desired. Any leftover dressing can be kept refrigerated for a week or longer for future use.
