Deliciously Simple Recipe: Mastering Koji Cook's Salad with Truffle Vinaigrette

We aim to consume plenty of salads, frequently following the French tradition of having them after our main course. A straightforward salad is ideal, as it is light and doesn't require many ingredients. This salad is very simple to prepare just before dinner. We typically accompany it with a warm baguette.

SIMPLE SALAD WITH TRUFFLE VINAIGRETTE- Recipe (serves 2)
2 small head of cleaned baby romaine lettuce or romaine hearts.
8 grape tomatoes, halved
2 tablespoons extra virgin olive oil
1 tablespoon truffle oil
2 teaspoons sherry vinegar
sea salt
fresh cracked black pepper
METHOD
Put the romaine in a salad bowl and gently toss with both oils, letting it sit for 5-10 minutes. Add the vinegar and toss, then sprinkle a generous pinch of salt and several grinds of black pepper, tossing again. Top with tomatoes and serve.
