Deliciously Easy: Koji's Simple Recipe for Moist and Tender Pork Roast

I've been preparing this pork roast recipe for quite some time and quite frequently. It's incredibly easy to make. The key is to brine it overnight or up to 2 days. I use it in sandwiches; it's ideal for a Cubano (I'll share that recipe later). It's delicious whether served hot or cold, and Koji loves it! It's crucial to slice it very thinly, as shown in the photo. Here, I'm serving it topped with leftover Al'Orange sauce (a recipe posted by Koji Cooks), but it would also be delightful with hoisin or your favorite BBQ sauce. In this photo, I'm serving it with simple jasmine rice and buttery sautéed green beans.
