Delicious New York Italian Manicotti Recipe - A Taste of Italy in Your Own Kitchen

New Yorkers have a special knack for Italian cuisine. Growing up in Northport, New York, we had numerous excellent delis, all offering fantastic Italian takeout. During my college years at Parsons in Manhattan, Little Italy was just a short distance away. Every autumn, I would begin my school year at the Feast of San Gennaro on Mulberry Street, always enjoying steamy Manicotti and Sausage. Here is a nostalgic recipe from a New Yorker. The cheese base is the same one I use in the Koji Cooks Calzone recipe.
NEW YORK ITALIAN MANICOTTI - Recipe (serves 4)
1 recipe for koji cooks marinara - refer to the marinara recipe blog.
1 box of Manicotti prepared al dente according to the package directions.
1 recipe for koji cooks broccoli and cheese calzone filling - refer to the calzone recipe blog
1 package of frozen chopped spinach, thawed and drained to make about 1 cup
Toppings include multiple slices of mozzarella, Parmesan cheese, and chopped Italian parsley.
METHOD
Mix the spinach with the calzone filling in a medium bowl. Use a disposable pastry bag to stuff the manicotti shells as shown in photo. Pour 1 cup of marinara with sausage into a rectangular baking dish, then place the filled manicotti on top. Drizzle 1-2 cups of marinara with sausage over the manicotti, cover with foil, and bake for 30 minutes. Take off the foil, top with the sliced mozzarella, and bake for another 5-10 minutes until the cheese melts. Top with a sprinkle of parmesan and parsley.
