In Italy, tomato sauces are quite simple. This is similar to a sauce you might find in Rome; try it on pizza or pasta.
SIMPLE HOMEMADE TOMATO SAUCE
3 tablespoons of extra virgin olive oil
2 tablespoons of freshly minced garlic.
2 bay leaves
2 teaspoons kosher salt
2 teaspoons sugar
1. 28-ounce can of crushed tomatoes
1/2 cup water
2 teaspoons Italian vinegar white. or red
15 turns of freshly ground black pepper.
METHOD
Place a medium-sized saucepan on medium heat, pour in the olive oil, add the garlic and sauté for 30 seconds. Mix in the bay leaves, salt, sugar, crushed tomatoes, water, vinegar, and pepper. Turn the heat to high until it gently boils, then lower to medium and let it simmer for 10 minutes, stirring occasionally to reduce slightly.
