An Authentic Twist: How to Elevate Retro 'Spaghetti O's with Kayem Hot Dogs Recipe'

This is a throwback dish reinvented with the finest New England hot dogs from Kayem. The recipe is my version of the renowned Franco American Spaghetti O's from the 1960s. It is very fun to eat and brings back childhood memories.

RETRO SPAGHETTI O's w/KAYEM DOGS - Recipe (serves 6)
1 pound of O pasta cooked al dente in salted water, drained, reserving *1 cup of the pasta cooking water.
10-12 Kayem Hot dogs cut in 1/4" lengths.
GARNISHES
1/2 cup freshly grated parmesan cheese
1/4 cup chopped italian parsley
SAUCE
2 tablespoons of extra virgin olive oil
2 tablespoons of sweet butter
1 cup of diced sweet onion
2 teaspoons of minced garlic
1-28 ounce can of tomato sauce
*1 cup reserved pasta cooking water
1.5 tablespoons sugar
1 teaspoon kosher salt
20 grinds of fresh black pepper.
METHOD
Place a Dutch oven on medium heat, add the olive oil, and melt the butter. Add the onion and sauté for 3 minutes, then incorporate the garlic, tomato sauce, pasta water, sugar, salt, and pepper. Turn the heat to medium-high and bring the mixture to a rapid simmer, stirring continuously with a wooden spoon for about 5 minutes. Lower the heat to medium, mix in the Dogs and heat for approximately 5 minutes, then add the O's and stir until everything is piping hot. Serve with a sprinkle of parmesan cheese and parsley.
